No Spend Challenge Week One

Frugal April

Day 1: Friday, April 1, 2016
Not much going on today, so this should be pretty easy. I’m taking my lunch to work consisting of a Starkist Tuna packet, cashews, two clementines and a small salad. I’m getting my haircut today after work so there will be no temptation for happy hour. And on the menu tonight, shrimp kabobs on the grill with mushrooms, bell pepper, onion and tomatoes.

Day 2: Saturday, April 2, 2016
Today was relatively easy. For breakfast we had bacon and eggs. I then made a Jenny-O turkey breast in the slow cooker. It’s so easy, but if you need instructions click here. Plus, it’s such an inexpensive meal at $9.48 for the entire turkey…plus left-overs. I added some cooked frozen veggies. In the end we had a nice inexpensive, non-restaurant, cooked at home meal. Today wasn’t without it’s challenges though. The husband and I ran errands and it was tempting to roll into Sonic for an iced tea. We also went to Home Depot where some delicious grilled hot dogs were being made for lunch outside….it was REALLY hard to walk away…but we did it!

Day 3: Sunday, April 3, 2016
Today was a lazy Sunday filled with working on side-hustles, grocery shopping, bike ride with the hubby and a little bit of planning ahead. I went to the grocery store pretty early in the day to get us food for the week. I scored $2.75 on Ibotta and entered my receipt into Wal-Mart Savings Catcher.  I also did a little bit of planning ahead with food like the vinegar and cucumbers I made this evening. As far as temptation? There wasn’t any today.  We had ribs in the oven for dinner and bacon and eggs again for breakfast.

Day 4: Monday, April 4, 2016
I actually made it to the gym this morning and came home and had a protein powder smoothie with frozen fruit for breakfast. For a mid-morning snack I had cashews and for lunch it was a repeat from Friday…tuna and spinach salad. For dinner we had thin cut rib eye steaks and frozen Birds Eye Squash and Zucchini mix ($2.28 for a 16 oz. bag that we’ll use for three meals). Plus, the particular bag I bought I also received a rebate on Ibotta.

Day 5: Tuesday, April 5, 2016
Today was a pretty low-key day. I ate bacon this morning, and prepped some extra slices for dinner. Lunch was a business luncheon, so my place of employment paid for that. And dinner was baked teriyaki chicken with pan seared mushrooms, bacon and onions. Didn’t spend any money (of my own) on food today. Side-note, made $0.27 on my Wal-Mart Savings Catcher bringing my total balance to $55.88. I’ll keep saving on this app and use the funds for our Christmas meal.

Today I treated myself to a FREE lunch at Chipotle because I had a coupon. I had the salad, and saved $7.09 (what I would have paid). For dinner we had salmon, cauliflower rice and more sauteed mushrooms. I also cut up a cantaloupe before it went bad.

Day 7: April 7, 2016
Today I had another business lunch. It was a great lunch with a reporter that I adore. Then after work I had an event with wine and cheese…FREE. The husband had chicken wings ready for me when we came home…they were great! No money spent, but no photos taken either. 🙂
